I struggled with this too, but it actually works fine. It just requires a different (unusual) "style" of keyboard shortcuts sequence:

Copy: Ctrl+C
Paste: Ctrl+V (overwrites everything, values and format, ...)
Context menu: Ctrl (! press and release !)
Select style (Formulas only): "F"(Ctrl is NOT pressed anymore)

Note, Ctrl + F will not do it! The sequence consists of FOUR key combinations / "clicks":
Ctrl+C
Ctrl + V
Ctrl
F

I much prefer the keyboard controlability to having to use the mouse for every daft little thing (and breaking the GUI, like in one "unnamed" competing product...)

This means for mac the shortcut : cmd + shift + V

Most modern document processing apps are using the feature that allows choosing what to do with the pasted content, ONLYOFFICE also does. Please refer to the official guides for each editor on how to use Paste Special feature:

To add to Phil's reply: I am not sure how to easily choose whether to keep formatting when pasting within ONLYOFFICE Documents Editor.

Perhaps adding this to the right-click context menu under the Paste option would make this feature more transparent to users, improving the user experience.

It already exists; you can keep the original formatting or keep only the unformatted text.
